French fries is one of my favorite fast food dish I would like to eat anytime. To have a good quality of French fries KFC and McDonald’s was the only choice for me. Meanwhile I was trying various recipes to get a perfect French fries. I was very fortunate to get this recipe through search engines. Now I like homemade French fries more than the fries served in fast food restaurants. This recipe gives tasty, crispy and golden perfect fries where you too can enjoy homemade fries.

For deep frying
1)Take a potato which is non starch. The presence of more starch in potato makes your fries soggy.
2)Peel off the potato and cut them into long thick strips. Take a bowl filled with water and place potato strips in it.
3)Let it be in water for about 10 minutes. The excess starch will be removed when you soak in water. Wash the potato strips more than two times until all the starch contents are removed.
4)Boil 4 cups of water in a vessel till you get rolling boil and add sliced potatoes. Parboil the potatoes for 5 minutes. Do not overcook them as there are chances of breaking the potatoes. It should be stiff and should not break.
5)Drain the water and add normal water to stop potatoes from further cooking. Allow it to drain completely.
6)Take a kitchen towel and spread potato strips all over. Pat dry them to remove the excess water content.
7)Transfer the potato strips into zip lock bags or airtight container and refrigerate it for atleast 2 hours.
8)Remove it from refrigerator after 2 hours to deep fry.
9)Heat oil for deep frying and adjust the flame to high once oil receives sufficient heat. Take a handful of potato strips and leave onto oil gently one by one.
10)In the beginning oil will splutter for few seconds due to moisture content present in potato. It will take 7 to 8 minutes for one batch of potato strips to get fried till golden and crisp.
11)Remove onto absorbent paper and sprinkle required quantity of salt. Serve hot crisp French fries along with ketch up’s.
- You can prepare a bulk quantity of French fries but remember to pack it in many small zip lock bags. While frying the potato take one zip lock bag and finish it off. Do not keep the remaining potato pieces again in refrigerator.
- As soon as you put the chilled potato pieces onto oil the temperature of the oil gets decrease that is the reason you need to fry them on high flame.
