Egg Shahi Kurma

Preparations :
  1. Boil eggs, peel off the skin and cut into halves.
  2. In a glass of warm water soak cashew nuts for 20 minutes.
  3. Heat a small frying pan in medium flame, drop 2 tbsp oil and fry chopped garlic and ginger, sliced two onions, chopped tomato and cumin seeds.
  4. Let it cool for few minutes. grind these mixture along with soaked cashew nuts to a fine paste.
  5. In a kadai add remaining oil fry one chopped onions and add grounded masala.
  6. Add water as per the consistency you like to have.
  7. Saute for few minutes and let it cook properly. Add garam masala powder and chilli powder and cook for few more minutes.
  8. Add boiled eggs and slowly saute till it gets cover with masala.
  9. Turn off the flame and sprinkle chopped coriander leaves.
  10. Serve hot along with Poori / Roti's / Naan / Chapathi or Kulcha.

Ridge Gourd Peel Chutney / Gosale Shire chutney

Preparations ::


  1. Peel off the skin of 2 ridge gourd, wash well.
  2. In a deep pan add 3 tbsp oil, 1 tbsp mustard seeds once it crackle add 1/2 tbsp cumin seeds, 8-9 curry leaves, 1/4 tbsp asafoetida.
  3. Add skin of ridge gourd, salt and 3 green chillies and pour 3/4 cup water. Close the pan with a lid and let it cook.
  4. Once it cooks add 1 cup grated coconut and saute well for few minutes.
  5. Let this mixture gets cool. Grind the mixture using very little water along with 5-6 fried dry red chillies and tamarind. 
  6. Grind to a fine thick paste. Take into a bowl and serve as a side dish for lunch/dinner.

Note: 
Reduce the quantity of green chilli if you like less spicy.

Naan without Tandoor


Preparation Time  : 15 min

तेल
2 tbsp

Ghee

For Greasing

1/4 cup or as required


Preparation :
  1. In a wide bowl add salt, sugar, milk, yogurt and baking soda and mix well.
  2. To the above mixture add wheat flour and all purpose flour, By using water prepare the dough.
  3. Knead well till all its stickiness goes and keep aside for 10 minutes.
  4. Sprinkle oil above the dough and knead again for few minutes.
  5. Cover the dough with wet cloth for 2 hours.
  6. Make a big lemon size ball of the dough and start rolling.
  7. When you make a small circle sprinkle few sesame seeds and coriander leaves and roll again.
  8. The size should be approximately 4-5 inches round circle.
  9. Heat a tava or griddle and grease it with ghee. Place the naan in a medium flame and cook both the sides of naan till they get browned and slightly charred.
  10. Remove the naan and apply some butter/ghee or oil and serve hot.

Holige/Puran Poli/Obattu

To Prepare Filling
Bengal Gram
चना दाल
1 Cup
Jaggery
गुड
1 Cup
Cardamom
इलायची पाउडर
6-7 Pods finely powdered


Preparation :

Preparing the Dough :
  1. In a large bowl add all purpose flour or maida along with semolina, turmeric powder, milk and salt.
  2. Add enough water to prepare a dough (like chapathi) and knead well until all its stickiness goes.
  3. Add oil and knead again for few minutes and keep aside for 2-3 hours.

Preparing the filling :
  1. Soak Bengal gram for at least one hour wash well and drain the water.
  2. Cook the daal using pressure cooker by taking one whistle. Do not put extra water and daal should retain its shape.
  3. Drain the excess water and transfer it to a kadai in a medium flame.
  4. Add jaggery, once it gets melt saute for few minutes and mix well. Toss in the powdered cardamom.
  5. The filling should be very dryish. Continue stirring until you can prepare a round ball of it without sticking to your hands.
  6. Turn of the flame.

Preparing the Holige:
  1. Knead dough once again and divide it into approximately 15 round balls, similarly prepare 15 round balls of filling.
  2. Take one lime size ball of daugh into your hands gently roll the dough like a small chapathi and place one lime size ball of filling in the centre. The centre portion should be thick and edges should be thin.
  3. Close the filling properly by sticking all the edges of dough to one another. Roll it gently by coating flour whenever required and prepare a round shape flat bread similar to the size of big chapathi.
  4. Heat a tawa in a low flame, and fry the flat bread both side till golden brown spots appear.
  5. Serve hot along with ghee.
