Batate Bajjun Upkari / Roasted Potato Stir Fry

Ingredients :

4 tbsp
Urad Daal
उड़द दाल
1 tbsp
Mustard Seeds
सरसों के बीज
1 tbsp
Curry Leaves
करी पत्ते
Green Chilli
हरी मिर्च
Grated Coconut
किसा हुआ नारियल
2 tbsp
A Pinch
Red Chilly Powder (Optional)
लाल मिर्च पाउडर
1 tbsp
To taste

Preparations :

  1. Peel off the potatoes, chop into lengthy thin slices, wash well and drain.
  2. Heat a non stick pan in a medium flame drizzle oil, add urad daal, mustard seeds, curry leaves and green chilli(Slit into half). Saute for few seconds and add drained potatoes.
  3. Reduce the flame to low, add salt and saute potatoes for few minutes. Close the pan with a lid. Let the potatoes cook and fry in oil.
  4. It will take around 15-20 minutes to cook potatoes properly. Open the lid and check if it is cooked and add red chilly powder.
  5. This is purely optional but adding chilly powder gives you an amazing taste to your stir fry. Saute for 5 minutes , add grated coconut and asafoetida. Mix well and serve warm as a side dish for lunch/dinner.

Note :
  1. Do not add water for cooking potatoes. It should be cooked only with oil.
  2. Use of non stick pan will avoid the extra burning of potatoes.
