Egg Shahi Kurma

Preparations :
  1. Boil eggs, peel off the skin and cut into halves.
  2. In a glass of warm water soak cashew nuts for 20 minutes.
  3. Heat a small frying pan in medium flame, drop 2 tbsp oil and fry chopped garlic and ginger, sliced two onions, chopped tomato and cumin seeds.
  4. Let it cool for few minutes. grind these mixture along with soaked cashew nuts to a fine paste.
  5. In a kadai add remaining oil fry one chopped onions and add grounded masala.
  6. Add water as per the consistency you like to have.
  7. Saute for few minutes and let it cook properly. Add garam masala powder and chilli powder and cook for few more minutes.
  8. Add boiled eggs and slowly saute till it gets cover with masala.
  9. Turn off the flame and sprinkle chopped coriander leaves.
  10. Serve hot along with Poori / Roti's / Naan / Chapathi or Kulcha.
